Hi guys! Today I want to talk about what’s in my lunchbox. As a typical working person in a face paced environment, miles of traffic and long hours it is sometimes very difficult to have a good meal during the weeks. Most persons I know , after they arrive home, want nothing else other then a hot shower and to jump in their beds. We then end up with terrible diets and unfulfilling meals.
That stops today!
I will be posting quick and simple lunch recipes which are fool proof and can last in the fridge for days at a time and use very affordable ingredients. Today’s focus is Teriyaki Chicken with my key ingredient La Choy Soy Sauce.
You may feel free to use any soy sauce that you wish, however, I found that this soy sauce has a deep flavor which I absolutely enjoy and a sweet aroma. It is also very affordable and can be found in most supermarkets islandwide. Also, as a plus, a little goes a long way so don’t worry about the small size.
Now lets get to today’s lunch!
Today I had juicy Teriyaki Chicken with steamy white rice. Since the Teriyaki has in soy sauce which is a bit salty, I balanced it out with a slice of sweet plantain. I also added sweet pepper to give it that extra oomph.
